Cheesy Vegetable Rice

I don’t share a lot of recipes because I am a very simplistic cook, and most of what I make does not actually require a recipe.  This dish for example does not actually require a recipe, but I will make one up for you so that you can share in the deliciousness of it as well.  I love when I can make a full meal with all of the nutritional basics in one pot.  So for this dish, you need 3 cups of rice (uncooked), mixed frozen vegetables, 6 eggs, and shredded cheese (either cheddar or mexican).  I also use season salt to add flavor, and sometimes I add some diced chicken if I have it around.

Cook up your rice in a rice cooker (or whatever method you prefer), and while the rice is cooking, saute the vegetables in a large wok or big pot.  Once the vegetable and rice are both ready, you add the rice to the wok of veges on the stove and mix it all together.  Next you stir up the eggs in a bowl and add season salt.  Pour the eggs over the rice mixture and mix it in.  Put a cover on the wok to keep the heat in while the eggs cook.  You can stir occasionally so that the eggs cook evenly in the mixture.  Last you add a couple of handfuls of shredded cheese and mix it into the rice mixture.  You can also sprinkle some on the top to give it a nice cheesy look.  Remove from the heat and put the lid on until the cheese is melted, and it is ready to eat.

This recipe is a favorite with my husband, and he prefers it with just the vegetables and no meat (and he is a major meat eater).
